It seems like a lot of people were crazy about Starfield and making a big fuss about how great and amazing it is, but now suddenly I am noticing lots of haters. What changed? Or, did the shine just wear off of a new game?

I feel like this game wasn't as good as it "should" have been given Bethesda's typical handling of big "open world" games and the amount of resources poured into making it.  And, I guess it seems to feel worse as you spend more time with the game and things just get sort of repetitive, there is a lot of "sameness" between the bazillion different planets that you can go to.  I found this to be a good take from someone who likes these games.  (Disclaimer: Haven't played the game myself... and this sort of thing is why I don't buy into hype and pick up games at launch anymore, I'll wait to see feedback first.)

I have not played it because it is new (expensive) and I generally refuse to spend more than $20-$25 on games, and I am not a fan of open world titles as a general rule. I heard it is like a reskinned version of Fallout and I am also not a fan of Fallout. Generally too slow/boring and cumbersome, kind of like Skyrim and the Witcher titles, which I also personally find very boring. I was merely making note of the observation that everyone seemed goo-goo-gah-gah in love with it initially and now not so much.

Yeah, I am basically chalking this up to hype turned into reality as people spent more time with the game.

There wasn't even that much of a hype, as initial reviews provided immediate reality check for those who would need it and be open-minded enough to receive it, while people familiar with Bethesda games were immediately clear on what to expect from the latest product: good to occasionally great tech, with writing and design lacking (which defeats the purpose of an RPG game IMHO)
